Exploring Phu Quoc specialties, diners cannot help but rave about Ken noodles (bún kèn) - a local delicacy which is extremely fragrant and delectable. The sweet rich coconut juice, combined with aromatic herbs, creates a totally unique flavor. Made from typical species of saltwater fish particularly found in Vietnam’s southwestern sea, this dish definitely deserves a place in your list of what to eat in Phu Quoc.

1. What is Bun Ken?

Ken noodles (bun Ken) were first made by the Khmer minority group living in Ha Tien district of An Giang province. The name “Ken”, also known as “Khen”, is a loanword from the Khmerian language which means dishes cooked with coconut juice. This specialty is a delicate combination of saltwater fish, white rice noodles (bun), raw vegetables and herbs, pickles, and broth.

The main ingredients of the flavorful broth (or nuoc leo) consist of coconut juice, minced fish, curry, and five-spice powders. The fish used for bun Ken Phu Quoc are yellowtail scad fish (ca ngan) or barracuda fish (ca nhong). Meanwhile, Ken noodles in other places in the Mekong Delta region are made from snakehead fish. The fish are carefully selected, cleaned, and fileted. After that, they are chopped and ground, then sautéed with garlic and chili. The cook will use coconut juice to boil the fish and season to taste.

The mixture is cooked until it becomes slightly viscous and has a deep amber color. It is the coconut juice which gives the fish-based broth a lovely creamy texture while fresh herbs add a distinctively sharp tang.

2. The Flavor of Bun Ken
Vinpearl’s local insights suggest that "unique" is the perfect word to capture the essence of bun Ken for any first-time visitor. You will immediately notice the distinct aroma of sea fish blended with rich coconut milk as soon as the bowl arrives. The golden broth features turmeric and lemongrass, offering a subtle heat from ground chili that awakens your taste buds. This dish becomes more alluring with every bite, as its rich yet delicate flavors embody the true finesse of Phu Quoc’s cuisine.
The local abundance of the sea defines the key ingredients that make bun Ken so special:

  • Barracuda or silverfish: These local fish provide firm, sweet flesh with very few bones. Chefs boil, debone, and finely grind the fish before sautéing it with spices to create a savory, fragrant topping.
  • Coconut milk: This ingredient acts as the soul of the dish. Freshly pressed coconut milk adds a creamy texture and natural sweetness that balances the salty spices and fish.
  • Fresh vegetables: You need these for essential crunch and freshness. The dish typically includes pickled papaya, bean sprouts, cucumber, banana blossoms, and fresh herbs like basil.
  • Aromatic seasonings: A mix of lemongrass, garlic, chili, and curry powder creates great complexity. A side of sweet-and-sour fish sauce further enhances the overall flavor.
  • Fresh noodles: Soft, white rice vermicelli serves as the perfect base to absorb the thick, flavorful broth.

While bun Ken is a rustic dish, it requires great delicacy during preparation. You must carefully select and debone the fresh fish before sautéing it to achieve the right moisture. The broth needs a precise consistency where the coconut milk complements the natural sweetness of the fish without overpowering it. For the best experience, you should eat  bun Ken while it is hot and mix all the components thoroughly, adding extra fish sauce or chili to suit your taste.

3. How to eat bun ken the right way?

When a diner orders Ken noodles, servers will quickly put white rice noodles in a bowl and add a variety of raw vegetables, soy sprouts, green papaya salad, fresh herbs, etc. on top. Then, the prepared broth with minced fish is poured into the bowl. Before enjoying the dish, you should mix all these foods well. Additives like lime juice and sweet-and-sour sauce are always available on the table for you to add. And don't forget a little fresh or dried chili to make the dish more aromatic and spicy.
