Five fundamental factors are taken into account during the selection process: superior ingredients, a seamless fusion of flavors, expert culinary skills, the chef's unique style as seen in their dishes, and, most importantly, the ability to maintain consistency in quality over time.

For the selection process, Michelin inspectors, who are experienced professionals in the restaurant and hospitality industry, play a crucial role. After multiple inspectors dine at a restaurant, they will discuss their experiences and reach a final decision. The Michelin Guide Ceremony is typically held annually. Each year, it unveils the latest selection of top-rated restaurants and awards coveted Michelin stars to them.

2. The first Michelin Guide Ceremony in Vietnam

The Michelin Guide was first introduced in 1900 by the tire company Michelin as a means to promote sales. The guide initially provided information for motorists, including maps, hotel recommendations, and repair tips. However, it soon expanded to include restaurant reviews and ratings, eventually becoming synonymous with fine dining.

In 1926, the iconic Michelin star rating system was introduced, with one star denoting a very good restaurant, two stars indicating excellence, and three stars representing exceptional culinary mastery. Today, the Michelin Guide is published in multiple countries worldwide, each having its own team of inspectors and selection criteria.

Michelin made its official entry into Vietnam on June 6, 2023, and unveiled a list of culinary destinations in Hanoi and Ho Chi Minh City. Michelin Vietnam has introduced a captivating array of options for those eager to explore Vietnam's rich culinary heritage. 

On the ceremony day, a total of 103 establishments were honored across four award categories, including 4 Michelin star Vietnamese restaurants, 70 Michelin Selected restaurants, 29 Bib Gourmand restaurants, and three individuals receiving the Michelin Guide Special Award.

3. A complete list of Michelin star restaurants in Vietnam

A trip to discover Michelin star Vietnamese restaurants will be an amazing adventure for anyone. From elegant fine dining venues to hidden gems showcasing authentic Vietnamese flavors, these culinary destinations promise an unforgettable gastronomic experience.

3.1. Anan Saigon (Ho Chi Minh City)

  • Opening hours: 5:00 PM - 11:00 PM (closed on Monday)

Anan Saigon is the first establishment in Vietnam to be awarded as a Michelin star Vietnamese restaurant and also the only Michelin restaurant in Ho Chi Minh city. Prior to that, on March 28th, the restaurant was also honored at the Asia's 50 Best Restaurants Awards held in Singapore.

Vietnamese-born chef Peter Cuong Franklin, the founder of Anan Saigon, has shared that the restaurant stands out by offering guests a variety of options, including à la carte dishes such as Dalat Pizza, taco-style Vietnamese crepe, and foie gras spring rolls. In addition to the à la carte menu, Anan Saigon also offers two tasting menus: the Saigon Tasting Menu with 10 dishes and the Chef's Tasting Menu with 12 dishes.

3.2. Gia Restaurant (Hanoi)

Another restaurant on the list of Michelin star Vietnamese restaurants is Gia in Hanoi. Chef Sam Tran of Gia was also honored with the Young Chef Award by Michelin Vietnam. Gia specializes in Vietnamese cuisine, but the presentation of the dishes here makes them hard-to-recognize as familiar dishes. What's remarkable is that Sam Tran never pursued a formal culinary program. 

Unlike a regular à la carte menu, Gia serves a tasting menu that takes guests on a culinary journey through over 10 pre-determined dishes accompanied by beverages. Every three months, Gia changes its menu, making it unlikely for previously featured dishes to reappear in the new season. In addition to the effort to revive forgotten ingredients, Sam Tran also brings a fresh and fascinating perspective to traditional dishes such as crab soup noodles, eel soup, and chicken noodles.

3.3. Hibana by Koki (Hanoi)

Michelin Vietnam highly appreciates this restaurant’s capability to boast an exceptional sake library, rare tea collection, and delightful array of cocktails that will transport guests to the enchanting landscapes of Japan. Patrons can expect the finest ingredients sourced from various regions, including the prized Yaeyama Kyori beef from the Yaeyama Islands in Okinawa, the seasonal fish from Japanese waters, and the delectable hairy crabs from Hokkaido.

3.4. Tam Vi (Hanoi)

Tam Vi restaurant is a Michelin star Vietnamese restaurant that embodies the classic style of traditional tea houses with a strong Northern Vietnamese essence. This Michelin restaurant in Hanoi evokes a sense of familiarity with its use of vintage tables and chairs, bamboo chopsticks, and chopstick pairs. 

Tam Vi's menu primarily features Northern Vietnamese home-style dishes, as well as some dishes from the central and southern regions. The menu changes with the seasons, offering diverse culinary experiences. Guests can order set meals or individual dishes according to their preferences.
