  • Beef tendon is also sometimes used

  1. First, make an anticoagulant mixture. Bring water or broth to a boil in a large pot and add fish sauce in a 3:2 ratio. If you are not used to the taste of fish sauce, substitute with water and salt mixed in a 2:1 ratio.
  2. Add grilled onions, pork/duck organ slices, and minced cartilage or meat to small bowls
  3. Slowly pour the fresh animal blood into the anticoagulant mixture while stirring constantly to prevent clumping. 
  4. Pour the blood into the prepared bowls and let them sit until the blood thickens and freezes.
  5. Sprinkle some crushed roasted peanuts, herbs, and minced meat or organ on top before serving.

Ingredients:

  • Fresh lobster blood (can also use scallop or shrimp blood)
  • Minced lobster meat
  • Water
  • Pepper
  • Herbs (mint, cilantro, perilla leaves, coriander)
  • Lemon
  • Roasted peanuts and sesame seeds for garnish 

Instructions:

  1. Bring water to a boil in a pot and add pepper and herbs.
  2. Slowly pour in the fresh lobster blood while stirring constantly.
  3. Add minced lobster meat and steam for 5 minutes.
  4. Take off the heat and let it cool for a few minutes.
  5. Squeeze lemon juice over the soup and mix well.
  6. Serve with garnishes of roasted peanuts and sesame seeds.
